I was a chef in Newwcastle.
The owner there had the same problem.
So when I stared there we changed to
a more laid back stlye.

Lower prices,turnover,profits.

		<description>I always watch Gordon Ramsay, and he absolutely always works the same formula:
Observe current situation (set the baseline) 
Clean the kitchen (set the environment)
Simplify the menu (set expectations)
Fill the restaurant with punters (R+ for new start)
Restaurant struggles to cope but is encouraged to move up a gear (coaching) At this point, he gets people who don't fit to leave the organisation, or the manager to decide to fire them!
Restaurant tries again and is successful (R+ and ££)

I am sure the TV misses out some of the R+, for dramatic effect, but there is always a "moment of truth" for the subject when they realise they just have to change. Normally at this point, the only way is up!</description>

		<description>I don't agree with the Kubler Ross R- analogy. I think Kubler Ross better describes an Extinction process (R+ removal) and then subsequent identification of an alternate source of R+. This fits very well with death of a close friend, loss of a job, road accident or any other traumatic event where a major source of R+ is removed.</description>
